A sound wave traveling through air will cause a sinusoidal pressure variation in the air, which is a characteristic of longitudinal waves. But, you are right, sound is a longitudinal wave and for ease of understanding "cancellation" we used a transverse wave as most measuring instruments and computer programs will use a transverse wave on the display to show sound.

You are correct! It would be known as destructive wave interference where it temporarily cancels out a wave at a given moment. The two pulses have opposite displacement and when they meet at a given point they pull on each other to "cancel" out for only that meeting point. Once the waves pass each other, they go back to normal.
